Nothing speaks summer, like an old fashion buttery hot Apple Pie! I can remember my Grandma making apple turnover and pies, that the whole family would just go crazy over! Apple pies has a place in our Family dessert table History! When I think of apple pies or apple turnover I think of the original chef, Earline Grady (Grandma). This one is for you!

What if I tell you that you can get the same taste and goodness of a whole baked apple pie in a mini buttery cookie! Not only that, what if I tell you it’s easy like 1-2-3 and with little time in the kitchen! Speak no more! I got you! Introducing MOV’S Vegan Kitchen Apple Pie Cookies!

Ingredients for Apple Pie Cookies

  • Crust : 1 box of pillsbury or Publix pie crust ( 2 sheets per box) also plant-base
  • Filling : 2 large Granny Smith apples
  • 3 tablespoons of vegan butter 1/4 cup of agave
  • 1 teaspoon of fresh lemon juice 1 teaspoon of oat flour
  • 1 teaspoon of cinnamon Icing (optional)
  • 1/4 cup of powder sugar
  • 1 tablespoon of water or lemon

Side note: You can get apple pie filling if you don’t want to make it from scratch!

Instructions

Let’s start with the filling.

  1. Wash and peel your apples, then cut it into small chunks.
  2. Place chunks in your saucepan, then add lemon juice, vegan butter, agave and cinnamon.
  3. Stir everything together on medium heat and let cook until apples are semi-soft, then add your oat flour to make your filling thick and beautiful!
  4. Turn off the heat put to the side.

Now, onto to the pie crust.

  1. Take your first pie crust out and lay it on parchment paper or any dry flat surface.
  2. Unroll pie crust, then with a knife or pizza cutter (which I use), cut a strip from the top of the pie crust to the bottom. Put it to the side.
  3. With your 2nd pie crust, unroll it then lay it flat on the surface.
  4. Once this is done bring your pie filling over, and with a spoon, place your pie filling on top of the pie crust until it completely covers evenly.
  5. With the pie crust strips, start laying the strip from top to bottom, leaving a little space between each strip until completely covered.
  6. Start laying your remaining pie crust strips from left to right. Leave space until the pie is covered with the strips! You should see your pie filling between the strips.
  7. With a mini round cookie-cutter, you can start cutting out your mini apple pies.
  8. Then with a spatula, place them on a cookie sheet.
  9. With a brush, coat with melted vegan butter and more cinnamon to your liking.
  10. Bake in a preheated oven at 350 degrees for 30 mins. Afterwards, let it cool before enjoying!
  11. You can also drizzle vegan icing (optional). Mix your lemon juice or water with the powdered sugar, stir until thick and smooth, then drizzle on top of cookies!
